It was Catherine de' Medici who imported macarons from Italy on the occasion of her marriage to the Duke of Orléans, the future Henry II and King of France during the Middle Ages. Macaron de Nice honors this traditional macaron, the classic version, rather than the modern variation separated by icing.
Macaron de Nice was founded by François Ducroux, a maître artisan pâtissier in Nice, who had the idea to create a modern version of this traditional specialty by combining an almond biscuit with the regional flavors of the south of France, such as the citrus fruits orange and lemon, as well as the flavors of violet and anise, giving pride of place to Provençal specialties. The beautifully decorated tin designed by François' wife Gabriela reflects the sunny colors of the Côte d'Azur, with their daughter Anna dressed in a traditional Nice outfit, which pays homage to the bygone flower girl’s dress of Provence. Macaron de Nice brings to life the centuries-old traditional macarons, enhanced by the sunny flavors of the south of France. These flavorful, specialty artisanal macarons are produced only in Nice, France.
